Flap Cakes Recipe

Flap Cakes Ingredients
1 cup vanilla cake mix
1 teaspoon vanilla essence
2 eggs
1 cup milk
Baking spray
Method
- Sift the cake mix into the bowl.
- Make a well in the center; whisk the vanilla essence, milk, and eggs together in a separate bowl.
- Pour the mixture into the well in the cake mix and beat to form a smooth batter. Cover and set aside for at least 15 minutes.
- Heat the nonstick pan, spray with oil, spoon dollops of the batter and into the pan and fry over medium heat until flap cakes are golden and cooked through both sides.
- Stack the flap cakes on a plate and spoon over yoghurt and syrup.
- Use buttermilk or plain yoghurt for the mixture instead of milk.
To Serve: Yoghurt, Syrup and Fresh Strawberry
